EVO Oil "Caea" - Canino quality

Certified organic extra virgin olive oil obtained solely by cold pressing and mechanical processes. This Canino monocultivar, a variety typical of the territory since ancient times, is produced from our centuries-old olive grove, planted in the 19th century according to the ‘a cassettoni’ technique: with trees positioned 9.50 m apart, each plant enjoys optimal exposure and nourishment, a guarantee for the production of fruit of extraordinary quality.

Pairings

An ideal condiment for seasoning raw vegetables, soups, legume stews, bruschettas, and meats. Also perfect for frying, as it is particularly resistant to high temperatures.

Storage instructions

The oil is stored in stainless steel vats until the moment of sale to prevent oxidation, which causes rancidity. It should be kept between 15°C and 20°C, away from direct light and heat sources.

History

From Greece to Etruria, olive cultivation of the Canino variety in Tuscia has ancient origins. Numerous images depicting the olive harvest are impressed on vases and frescoes from the Etruscan era. Cultivation boasts a tradition at least three millennia long thanks to the mineralization of the volcanic soil, centered in the ancient powerful city of Vulci, where remains documenting harvesting and storage activities still exist today. In the early Middle Ages, oil production continued: from the Lombard era (8th century) until the Bull of Pope Leo IV in the 9th century, olive-growing territories were subject to the interest of local administrations, including the ecclesiastical one: since antiquity, oil was still used to fuel the lighting of churches, both urban and rural, during a period of strong building expansion. In more modern times, the history of Canino oil recalls the name of Lucien Bonaparte, the brother of the more famous Napoleon, who from 1814 promoted olive cultivation in the region after acquiring significant real estate properties.

‘Canino’ PDO extra virgin olive oil obtained European recognition in 1996 and boasts a production area that extends from the Canino mountains, from which it takes its name, across much of the Province of Viterbo, including the municipalities of Canino, Arlena di Castro, Cellere, Ischia di Castro, Farnese, Tessenano, Tuscania, and Montalto di Castro.
